Sunday: Beef Jerky, oh I mean Pot Roast with. This took a LOT less time in the oven than I anticipated…I forgot that grass-fed, lean beef doesn’t take nearly as much time than ‘regular’ beef. I blame Google Reader.
Meatless Monday: Middle Eastern Chickpea Burgers (combining this Cooking Light recipe and this EatingWell recipe which are very similar) with a tahini dressing, with Moroccan spiced spaghetti squash (Smitten Kitchen)
Tuesday: Beef stew & parmesan sage apples over greens
Wednesday: Cabbage with tomatoes and sour cream (Bittman’s How to Cook Everything Vegetarian) & sliced smoked chicken breast over salad
Thursday: Curry tempeh over kasha (shirataki for me) & Thai style green beans
Friday: 3 Cheers for Leftover Night! Give mom a cooking break…
Saturday: Caramelized egg custard (Alton Brown) with parmesan spaghetti squash
